The more you learn (the yamaha sound reinforcement handbook teaches a lot of the basic principals of sound and the applications of many real world devices found in the audio world), the more you might find that schools like Full Sail are not for you.
What 47ronin also stated about real world education (no pun intended) is also true. Getting that education really requires putting yourself in a studio setting a lot. A school can teach you everything you need to know to run a J series SSL board, but you'll never really learn the board until you're using it day after day.
Again, it's really up to you though.
