One thing that I find can give an acoustic guitar recording a lot of feeling is to record the same guitar piece twice. Pan one hard left, and the other hard right, and then slightly move one of the recordings out of line by a few milliseconds, just to give it a chorus spread effect.
I find this makes a remarkable difference on an acoustic guitar recording, and gives it so much more life & soul.
