Will taking finish off my guitar effect the tone much?

Since I'm a piano tuner/rebuilder, I have a fair grasp of what Muttley and Light are saying as a piano buisiness is pretty similar to a luthiers' although we don't build our own pianos ..... basically ALL our buisiness is some form of repair or tuning.
But you're entitled to charge whatever you wish to charge and the public can choose whether or not to use your services.
If no one uses you ...... then you're charging too much .
If you have more work than you can handle, then you're charging too little.

And if you do superior work, you can charge more than some guitar 'butcher'.
I have absolutely no problem with craftsmen getting a good living if they're able to.
And the reason that I'm so quick to do a lot of work myself is 'cause I can.
But the newbies do need to understand that learning to do this kind of stuff to your own gits carries a certain risk of screwing it up.
And it's very likely that no newbie should fool around with nitro, or for that matter, grinding mother of pearl carries some risks ..... the dust really needs to not be breathed.
So while I'm a big proponent of doing it yourself if you wish to try and learn (and I have explained to many piano customers how they can do a repair themselves and save some money), there can be no doubt that my over 30 years of experience lets me diagnose and fix a problem in minutes that they will never ever figure out period.

So YAY to all small buisiness men and while I'll mostly tend to jump in and say "do it yourself", it's because I believe in learning about that stuff and not because I think Light or Muttley overcharge. They are entitled to be paid for their knowledge.

heres some perspective for yu all talking about middle class wages-
i work 50 hours a week taking transmissions out of cars and installing rebuilt ones- i also do a bit of suspension and brake work, as well as a bit of this and that. if i fuck something up, that car could become a 3000 pound chunk of metal doing 100km/hr on the highway
i spend all day with bloody hands, a sore back and grease in my hair- i rarely get breaks, a 15 minute sitdown for lunch is a luxury i see maybe 2 days a week. for this i make 610$ a week- after canadian taxes and bullshit deductions i take home 468$- per week
ive been slogging it out like this since i was 16- im 37 now
when i was married with kids things were pretty good- but a pack of guitar strings was a luxury item, im single now, and i can afford to buy whatever i want- but there are cockroaches in my one room apartment, and if i want to buy that 200$ indonisian made guitar im going to miss a meal or two...
fuck i dont even have a car
but i charge 20$ for a full setup lol- and ill spend at least 2 hours on each
while the customer watches- and while i give a step by step explanation of each move i make- in the hope that the customer can then do it on his own
i figure- if you dont do it for the love of it only- some orientals will eventually make you redundant

And your point is?? Ever thought of working for yourself. It takes a bit of effort but the rewards are yours..

Does anyone have a guess or know what the wood will look like under the veneer if I did take it off? Will it be solid piece of wood that is smooth or will have lots of rough spots? Just wondering.

It will be multiple pieces of wood joined. And as far how smooth it will be ..... well, that depends on how well the veneer is removed.
