Don't be surprised if you have to use two different software packages. One for midi and one for audio / wav. You can always edit the midi in post and assign different instruments, even custom ones. So don't fret if you can't get the actual sound you want at the point of capture.
As far as ProTools. I've never used it. And I've heard of several studios that only have it installed on one machine. One that sits in a closet somewhere. Just so they can list it in the credits. But they don't actually use it, unless someone specifically requires it of them. Which most don't. Same with Avid for video. Sure if you need broadcast standards strictly adhered to you MIGHT use it. But unless you have a specific "PAID" reason for using it, you probably wont use it. Lots of other options that are quite capable of the basic things that most people need. Often with much lower system requirements / costs.
