For the purpose of orchestral recording, how do the Shure KSM 141's stack up? And are there any reasonably priced European small diaphragm condensers that offer a decent quality of sound a quiet signal and are well made, that I have yet to discover?

Well, in my experience, nothing wich says "shure" should get anywhere near an orchestra.

In that price range, maybe if you can get a used Beyer M130 and M160 for M/S? Ribbons are very flattering for orchestra recordings, a very classic sound.

Maybe a used pair of Neumann KM183 or 184's?

There are some pretty cheap great omnis out there, maybe check that out!
