Making Digital and Analog work Together??

Hello all,
I was hoping that someone can help me figure out how make the recording equipment that I have work for me. I have a Tascam M-216 Live Mixing board. To this I am planning on adding a Otari MX55 M-N-2 ("1/4 tape) deck, a fatar controller and an MPC-3000 sampler. I am just as much in to recording live as I am about sampling. I am really not sold on the whole computer craze. My thinking is that I don't mind having an ADAT to record on but I want to be able run all the digital back on to tape sometimes. I am really into the recording style that King Crimson utilzied on their earlier records. I was told by a rep. at Sweetwater that the one company making tape closded there doors 2 months ago and that is the end of tape. Is this true? I find that it is increasingly harder to get information from these businesses unless you want to buy the latest and the greatest. I really like being able to touch my components for adjustment as opposed to pushing fader or pots with a mouse. Are those days gone?? Thanks for your time!!

There's always the option to use a control surface with computer software if you're missing having physical knobs.

Or you could even run multiple channels out from an interface with multiple outs and mixdown externally.

Just something to consider when thinking about the pro's and con's of a computer based system.
