vocals & acoustic guitar

hey all - I'm finally getting around to recording a few songs - singer/songwriter stuff.
I've spent some time searching/reading and I feel a bit overwelmed.

I've got a 57 and some 58s as well as a couple of RE200s and a CAD e100.
Should I be looking for something else (I'd like to not spend more than $200-300 so I can put more into monitors/room) or should I be able to make this work with some placement experimenting?
Or maybe I should be asking...how would YOU make this work for you?

The Audio Technica Pro 37s are really good on acoustic guitar and you can probably get a pair in your price range. Also great drum overheads.
