IMO, the biggest bang for buck is ALWAYS in the microphone itself.
Electronic signal processing technology is way beyond microphone technology because electronic signal components are used everywhere. Typical electronics frequency response and accuracy greatly outstrips anything most people can hear or imagine that they hear.
The microphone itself is where the signal is created, and there are vast difference among them.
But it also just becomes a matter of taste.
Large condensers are good for sparkling up vocals, while small diameter condensers are better accuracy for acoustic instruments. But you can deliberately do the opposite and come up with unique sounds also.
There is an awfull lot of great music recorded on cheapo SM57 dynamics too !
My current favorite for cheapo, yet accurate, is the Electrovoice C04.
Just like electric guitars: "Quality" guitars have a "sound", but super cheapie guitars have a sound also. Sometimes the cheapy sounds better to your ear than the "high quality" sound. It is all just taste.
