Pretty much so. A Behringer ADA8000 would be an inexpensive way to expand your number of channels. I happen to own a Profire 2626 by the way and it's serving me well. A solid performer.

I think the Mac Mini = great value for money. Believe it or not but it has plenty of power for the average homereccer. I use mine with Reaper. Works like a charm.

Yup. The first mic I ever bought was an XM8500, just because I couldn't afford anything else. I never a/b'ed it to an SM58 myself but I let a singer borrow it from me once and he found it not too shabby either.
