I'm trying to remember the lead guitar parts that I always just haven't been able to contain myself from playing air guitar to and here they are in no particular order:

Hendrix - Little Wing
Gilmour - Another Brick (it has always moved me)
EVH - Jump
Brian May - Intro to "I want it all"
Gary Moore - Still got the blues
They guy that played the lead in the Commodores' - Easy like Sunday Morning
The Police - So lonely (I love the police :D )

AlChuck, much as I like Beck, I thought His Goodbye Pork Pie Hat solo was way cheesy - basically just proved that not only couldn't he solo over changes, but he wasn't even gonna try.

There's also an Eric Gale solo from some CTI session that just knocks me out, and one of Jimi's solos from Band of Gypsys, but I forget which tune.

thats a chunk of my LP collection.... Spiral by the Crusaders off the Free as the Wind album....mercy!!! even the bass line merits an award and would pass as a brilliant solo.

I've been trying and trying to think of something here, but I think I finally got it. On Passion & Warfare, the song after The Audience is listening, the last 8-16 bars of the solo after it get's weird, where all that panning happens, that always blows me away, especially with headphones.

Not home right now, can't remember the song's name. Damn.

anything Gilmour does Com Numb and High Hopes come to mind

Eric Johnson - version of Ave Maria (sp?) Don't know what album its on or where its from but the solo is pretty cool even though I don't like opera! Look for it on Kazaa

Also EJ's Cliffs of Dover (the live version is just sick)

Vai's Rescue Me or Burry me (gay song but kick ass solo at the end)
 
I though about mentioning Eruption, but decided against it just because to me, a good solo is part of a larger song, and takes it somewhere new, or adds something that wasn't there before.

Eruption has something about it though, that makes it different than all the other guitar-wanker 2 minute cadenzas that were popular in the '80's (remember "Hammerhead" or "BattleAxe"?). It has a sense of composition to it that makes it sound complete. And the intensity of even the easier parts of it is undeniable.

That little intro thing Eddie does to Women In Love on VH II alway kinda grabs me by the BooBoo and makes me want to play guitar.

That intro solo to Reelin In The Years will usually send a chill up my spine. In fact all the Steeley Dan solos are pretty tasty.

Other than my Mom and my Uncle Gerry, just about anything from Ace Frehley or Edward VanHalen drove me to play guitar.

The trade off between Ace and Paul on these two songs still gets me after all these years

Both these solos were not played by any member of KISS. I will leave you to look around the internet to find out who did them.
