A lot of the 'vintage sound' in old recordings is due to ribbon mics. They have a very smooth sound and rolled off highs. There was also the fact that they were recording to tape and bouncing tracks around which will tend to smooth out and push back the sound also. They also used real rooms for reverb chambers.
