I'm currently using an old, cheap relatively unknown Audio-Technica mic to mic my Marshall MG30DFX electric guitar amp.

The MG30DFX isn't a really bad amp, but also not a good one. Just a middling mediocre amp. Would upgrading my mic to a Shure SM57 or Sennheiser e609 be senseless without also upgrading my amp?

Also: Would using two mics instead of one present any significant improvement in sound or flexibility in recording?

Upgrading your mic will better reproduce the sound of your amp. Is that the sound that you want?
