underwhelmed by sm7b

I find the SM7 the most useful mic I own. I am perfectly whelmed by it.
 
Give it some time. I think I was a little let down at first, after all the internet hype, but I decided to live with it for awhile and slowly came to like it quite a bit.

I really noticed it more in the context of a mix. In isolation it's pretty boring. Not that different to a 57 really (I also like that nowadays). In a mix though, it just sort of finds its place and takes well to processing.

It's still not my favorite mic for my voice (that would be my md441) but sometimes it is depending on the song. I still sing trough condensers too sometimes but always give the sm7 a try. It's never bad. I left it set up for awhile on the stand as my quick access mic and just accidentally found myself really liking it one day.

Live with it for awhile.
 
I second your monitoring deficiency. I have a pair of Sony MDR V-600's and just got a pair of Senn HD-280's. Not that it helps having a pair of 10yo Sony's, but the 280's blow those away. In some respects they're even better than my M-Audio BX8's. You may not "need" to go so far as to get studio monitors, but I'd definitely invest in better cans.

i do also have a pair of senn hd-580, i just didn't mention them. i use them to mix too (i have a lot of times when i have to be very quiet)

i'm being pretty patient working with the sm7b, just because i see that it is probably to my advantage to understand where i can get it to work....

i still haven't gotten quite there.
