On another note, I was at a blues club a while back and one of the guys wrapped the mic cable around his amp handle and so he could hang a SM57 upsidedown in front of the speaker. The tone was fantastic, I guess the off axis coloration of the SM57 was part of his sound

Yeah people do that a LOT. I dont know if the off axis matters so much, its just the fact that you dont need an extra mic stand =]

Actually I've been playing around with some off axis stuff, and the SM57 sounded fairly good off axis for the snare bottom. Picked up on less of the attack and more of the guts.
