Whats The Difference In Normalizing A Wav File Vs Just Cranking Up The Volume Of The Track?

No difference at all....... Normalizing is nothing more than a calculated cut/gain in level. The calculation is typically based on the difference - in dB - between the highest peak, and 0dBFS............
