The secret to getting to the higher patches in the JV1010 lies in a portion of the midi spec known as 'bank select'. These can be entered into a track of the MPC by first consulting the Roland manual in the back under 'midi implementation'. What you will be looking for is Bank Select Commands, and these will be in the form of continuous controllers. It may be a combination of controller 6 and controller 38 or it may be controller 0 and controller 32.
To insert these in an MPC track go to the step edit page, rewind the sequencer to the start of the track and push 'insert'. This will bring up a screen that has options for note, pitch bend, program change etc. The one we are concerned with is 'control change'. Enter the bank number that you found in the Roland manual in one or two control change numbers, then in a separate entry enter the program change number for the sound you want the track to play.
