Can I convert LR (left-right) signals to MS (mid-side) ones?

No MS requires the specific mic placement technique of MS mic'ing: One first order cardioid microphone and one bi-directional (figure of 8) microphone in the same point and angled 90° creating a stereo image through a so called MS-matrix. The MS mic'ing requires "decoding" after the fact for proper imaging, you don't simply pan the 2 mics as you would with other placements.

If you're looking for the side (stereo) information of a LR signal (assuming you're in a DAW here) -

Copy the track to another stereo track and make that track MONO.

Flip the polarity of the mono track (go out of phase).

The combined signal will be the side information only.

Or you could play with one of those stereo enhancer plugins that came with your daw. It does the same kind of thing.
It's still not the same as mid-side mic'ing.
