- There is no way to separate the instruments in a regular mixed audio recording. Vocal removers work based on the fact that most pop music is mixed a certain way:

- With MIDI, you can separate the instruments, but MIDI is only for representing instrumental music: it's a form of digital note notation (so to speak) that describes what instrument to use and how and when each note should be played. You still have to supply the singing, but if you're looking for a vocal-less song, try searching for MIDI's of it on the web. Pretty much every popular song from any genre is out there somewhere, for free.
- Generally, MIDI sounds poor only because the MIDI bank is a small-size (low-quality). If you go the MIDI route, many music programs allow you to download different & better-quality MIDI banks or soundfonts (many free on the net, and if you can use soundfonts, that is) to use instead of the regular lousy-sounding MIDI bank (if you can use soundfonts, that is).
 
i don't really use midi. Are there soundfonts of midi pianos that sound like the real thing? or do they still sound crappy?

High quality Piano soundFonts that sounds real? Yess, there's alot of it available in the net for download by now. You can even get it for free... www.thesoundsite.net or google for Piano SoundFont Download...
 
Some of the soundfonts are very good. Just about every instrument is available.
-Do note that you need a decent soundcard and some powered speakers too though; an onboard sound chip and USB powered speakers won't sound impressive with anything. ~ Creative and EMu cards can run soundfonts with basically no lag, and the SBL5.1 is very inexpensive online for the OEM version. There's softsynths that run soundfonts that you can use with any card or software, but EMu cards do it with hardware and are tops for this. Softsynths=lag.
