In over my head with a Tascam Da78

I have recently aquired one of these excellent sounding machines but I am having trouble with the internal patchbay. Does anyone know if you can mix and record with this thing while being able to monitor all tracks in stereo out of 7 and 8? I can only monitor two tracks at one time while recording. Is that something I have to do in the submixer section? Can you submix and record at the same time while monitoring 8 tracks out? Any help from the vets out there would be majorly appreciated.
