Entry-mid level matched pair small diaphragm condenser's for piano and acoustics?

MSH-1 make every thing else seem unnecessarily expensive. they are very good, there are better but the cost diff is HUGE. A matched pair is a nice pair is worth getting your hands on figuratively & literally.
 
I think the 603s is discontinued now. I believe the 604 is the same mic but you get omni capsules too (and a pad and HPF).

I like the 603s, haven't used any of the Naiant mics yet (which is pretty disgraceful, I intend to pick some up soon).

If I was in your position I'd try the Naiants because they're cheap, lots of people say they sound good and they're designed, made and sold by a cool guy. If for any reason they're not to your taste you could sell them to me and start sampling SDC's (like the 604).
 
Given the budget here, I would definately consider the MSH's then since they at least fit the bidget. I would be weary of the mxl 603 and 604's though. I have both in my live stock and they are a thin and harsh sounding mic. Not unusable, but certainly not anything desirable either.
 
Sounds like the Naiants are the way to go here. You could get lucky on e-bay - I've picked up 2 pairs of Beyer MCE93s for @$150 a pair, but that's kind of a chancy deal if you have a target date in mind.
