I currently have a Mackie MCU which takes a dry contact closure into the console and sends a midi message to the DAW but those are a bit spendy. Most recording applications will let you use any inexpensive midi device (like a keyboard or other desktop controller) to do this. Depending upon the application (recording software), it may be piece of cake or a little midi hacking may be required.
Speaking of cake . I'm using SONAR which is one of the "easy" software packages that allow this. It has a "learn" function.

There is a new foot control on the market, called a Pok.
It is basically a wireless remote control pedal, using your sofyware's keyboard shortcuts. It transmits whatever keystrokes you want to your computer, when you press the buttons with your foot.
Much easier to set up than a midi pedal. Of course, it can do transport as well as any other commands available via keyboard. It's at www.x-tempozone.com
