Have you tried taking a small diaphragm condenser and sticking it right by your ear? That way it's hearing the guitar the same way you do. That's the sound you correct for when you play. It doesn't work with every guitar but sometimes it works very well.
Yep, have a small-diaphragm condenser (two actually) and I've tried the over-the-shoulder thing and it wasn't bad but didn't quite get there. I've tried single, X-Y, near, and a few feet off, aiming at various points of the guitar, and everything sounds boomy.
My problem, I think, is the space I'm recording in. It's small and reflective and I'm sure it's got low and low-mid hot spots that I just can't get out of.
The next time I try I'm going to move the rig into my living room, which is large and has a nice mix of live and absorptive surfaces, and then I can experiment with mic placement with, I hope, a bit more success.
