I've heard recordings that have vocal notes held out for an unrealistic time frame. I'm just wondering if there is any way, and if so how, to stretch a note to a desired length.

Here's an example of what I'm talking about

It's about 3:00 minutes into the song. He holds out the word "Down."

Thanks

Check out the program calle celemony melodyne. It will do exactly what you describe. I believe there are some tutorial videos of vocal stretching on youtube.

All DAWs nowdays have some kind of timestretching function built into them. They can be pretty transparent if you don't go all out nuts (although that in itself can be a cool effect). The other thing you can do is find a steady portion of the audio, then copy/past a bunch of them, making sure they overlap and then crossfade.

Edit: posted the exact same thing a someone else - lol.

I don't know how much good this is going to do you, but both the new version of Pro Tools (whichever it is - I forgot) and Apple's new Logic 9 have elastic audio. My friend has used it a little in one mix for a school project and it sounded completely natural (granted, he only stretched it a few beats.)
