Wow, haven't seen you in a long ass time.
These volume adjustments have little to do with your soundcard. You should really leave your line in levels fixed during a recording and adjust the volume before the soundcard and then after with your mixing software.
Most good multitracking software will allow you to draw volume envelopes...which basically allows you to "draw" the volume of each track as it progresses. Some software can even "remember" your movements within the mixer and redo them automatically (basically the exact same thing as drawing an envelope...just using a different method). n-Track has this capability and I would assume that most good software does.
Oops, I just notice that you're stressing "stereo". It sounds like you might be trying to record two tracks at once. Try to record both signals as hot as possible and then SPLIT the stereo track with your software. This, in effect, allows you to record two tracks at the same time with one measly soundcard.
