If you don't already have that gear, you might looks at the various field recorders out there now. Zoom H1, H2, H4n, Marantz PMD661, Edirol, Tascam, Korg, Nagra, and others. Some have mics and stuff built in. They run on batteries for hours and have no fan noise and stuff that you'd get with most computers, even laptops. But it depends on how much time and money you want to sink into the project. You could always hire out / rent, if it's a one time thing. Or hook up with a church that might have all the gear you need already in place. And someone willing to volunteer to operate it.
