setting which inputs to record from

alright - i've currently got four inputs running into n-track, and everytime i try to record something, it creates four new tracks. i realize that i can assign these inputs to certain tracks, but is there any way to tell n-track to just ignore them? (say, for instance, i'm doing an overdub with just one track).

Yup ....
Click the hammer on the playback VU's then click select I/O channels. Disable the inputs you don't intend to use.
Other option would be to click the little red buttons on the Record VU's for the channels you don't want to use and select "don't record from this channel" or even disable the pair.
