recording with ipad and powered mixer

Is there any reason I can't plug instruments into my yamaha emx212s powered mixer and then plug directly into my charging port of my ipad with the apogee jam? I want to be able to record vocals and instruments simultaneously. Any reason why I should not do this? What are the cons, I guess, is my question.
 
Right place... probably just not a lot of people here know how to record via an iPad.
 
Well from pictures that i see from google the apogee has instrument input and it's mono, but you need stereo input which also should be on line level.
 
Theoretically it should work. I guess the only concern I would have is overall quality during conversion (as well as the iPad's ability to process everything effectively, depending on its version). You'd basically be recording all of the instruments into a buss, correct? So you'd have to ensure that you had everything perfect before recording; unless the unit has the ability to process multiple recording tracks from the one apogee unit, all of the sound would end up on a single track. This significantly limits the amount of flexibility you'd have after the fact.

For casual recording just to get ideas down, probably a good idea.
For anything else, probably not.
