Would there be any sonic benefit to recording guitar (or bass) going from the line-out jack on the back of the amp into my mixer and then out from the mixer into my digital recorder, or is this signal overkill? Should I, instead, use only the line-out from amp directly into the recorder, or plug the guitar into the mixer only?

I don't think the mixer is serving any purpose in your guitar chain...is it?

So just go amp to interface/recorder.

Well here's what I think.
1) Guitar straight into recorder - clean signal, dry, no effects, kind of lifeless, but can be re-amped on the way out.
2) Guitar>amp>recorder - little more fun, get the sound of the amp, can use amp effects
3)Guitar>amp>mixer>recorder - no point unless the mixer has effects you want to use. Just make sure the amp goes into a line-in of the mixer, not a preamp or you will have way to much signal.

Note: When I say amp, I mean the line out of the amp. I assume you no NOT to use the out that would go to a speaker cab. Do that and you are gonna have a whole lot of smoke!

LOL, yeah I meant my amp has "tape out" phono jacks on the back - that's what I'll be using. Thanks!

I think it's pretty useless soundwise. I plug my engl screamer line out straight to my lexicon. It sounded OK thru monitors but, for some reasons it sounded 'really'cold and sterile when i played it back.

I'd prefer mic the cab or get the 'cab simulator' box like H&K red box

I play through a Fender Deville 2x12 because I want the sound of a Fender Deville 2x12...taking the pre-amp out defeats the purpose of having a specific amp for a specific sound...IMHO...of course. The 2x12 sound is music *sic* to my ears.

I wouldn't suppose you are using a Line 6???
If so, forget about it. I don't care how well you tweak it, the tone will suck lemons. Most amps have the same issue. You can try cab simulators, but you'll just end up frustrated at the final mixdown.

Mic'ing the amp is the only way to go for decent tone.
If you are in an apartment or record at night, it's OK for scratch tracks, but for the final deal, just do it right.

Bass guitar is different. It is acceptable and sometimes better to go direct, though you will need to EQ and compress later.
