Preamps and channels...

I just realized the preamp I was pondering/planning to buy is only one channel... It's the presonus VXP vocal processor/preamp.
Can someone explain to me what the differnce is between a one channel preamp and two channel...?
I can record in stereo with two right, wouldn't that make the sound much better.
Someone speak on this in anyway, I'm lacking info.
Also what connection is best to hook from a soundcard to preamp...like S/pdif or aes/eub etc. which works the best.

I just noticed that Sweetwater has the new Focusrite Penta for the upper $300 range. Thats a good preamp. Dunno about the included compression, etc, but the preamp is very good.
