There are some firewire consoles that work as audio interfaces too.

Alesis Multimix 16 USB 2.0 - 16 tracks out to the computer at the same time. Or one, if you want.

Thats what I use - got one on ebay pretty cheap - (but bought two from ebay that were DOA or screwed up!)
I had an Alesis 8 USB 2.0 but needed more channels
Its a kick ass mixer - I love it
Make sure its the USB 2.0 as the plain USB is only 2-channel not 16 discreet channels of awesomeness...
Comes with Cubase LE 4 which works just fine for me...
