could you post a link to any site that explains how the whole thing works, from explaining all the different channels, to DXi's under sonar.

Simply put:
MIDI=musical Instrument Digital Interface
General MIDI 127 insruments
data transmission from a sequencer to a midi device or visa-versa
16 available channels
Chl 1 could be a piano
chl 5 could be a bass
or any combination
chl 10 usually drums
You can edit level, pan position, velocity, etc...
