Is the SoundBlaster Fatal1ty any good for recording audio and good quality (better than my onboard audio?) I'll also be playing games and listening to music so some of the features it offers would help, I guess.

What would you recommend for me as a good sound card? I'm currently using onboard audio so I guess I need one.

Short answer…That card is not geared for audio recording.
As such it doesn't have the input types that you would want for line level, instrument level, or microphone level signals.
Also the drivers almost certainly aren't written with low latency in mind.

What's your preferred interface (pci/pcie/usb/firewire/etc)?

PCI or USB3.0, my board only has one PCI-E slot which is taken by my 7990 :(
 
Well, without knowing what you want to record I can't recommend a specific interface, but there is no shortage of quality USB audio interfaces with a range of capabilities.
For a good budget starting point take a look at the Tascam gear.
