My band has a crappy Behringer Mixer/poweramp (PMX 2000 maybe?), with an rca tape out. By running a tape out into the first two channels of ourblackface, we have a stereo recording, but it is impossible for our sound guy to make sure that things aren't clipping on the tape. Is there a way I can use the i/o's on the ADAT to use all 8 channels (so we can make sure things are balanced properly/not clipping)? Or are we going to have to buy more equipment, and if so what? Thanks a lot.

If I understand you correctly, you are saying that you are sub-mixing multiple tracks at the mixer, down to 2 tracks out of the mixer and into the ADAT, and your question is- is there a way to make sure that no individual tracks are clipping before it leaves the mixer as 2 tracks? If this is your question, than the answer is yes. Solo each track at the mixer and watch your levels at the meters on the mixer. If the mixer doesn't have meters, than solo each track and watch the meters on the adat. If this isn't the question, than you have to be more clear.
