Complicated mic question

being new at this and inexperienced i purchased a yama keyboard that does not have audio output cpapbilities. it will only record midi info via usb. now the sound coming out of the keyboard itself is gorgeous and to go from that to midi is such a let down. so i got this bright idea. what if i record the music, track by track, the old fashioned way, via microphone as opposed to directly into my computer?

so what would you guys reccomend is a good mik for such purposes?

Does it support headphones. I never heard of a keyboard without audio out. If it doesn't have audio out how do you know how it sounds?
