After recent advice concerning soffits I have attached a drawing of what I am planning on doing with my room.

The worry I have is that the wall units will sit 3 feet back and stick out from the wall creating a reflective surface right behind my monitors. What should I do about this? I would think this will cause some serious early reflections.

Ryan, I'm assuming this is a control room, or a control/tracking combo?
Given that, I think you need to give some serious thought to your control room geometry.
Soffit mounted speakers (and nearfields for that matter) are usually angled at 60 degrees and create an equilateral triangle with the listener position. (Actually on soffit mounted mains, the apex of the triangle usually falls just behind the engineer's position.)
I don't think it would be difficult to do in your room.

So what I would really want to do is put the monitors more in the corners at an angle. I appologize for my serious confusion.

Yes!
Much better.
Now you have something you can move forward with and detail out.
Put your console or desk in front of that chair, and move the "engineer's" position back just a tad.
