Could someone hear help exlain to me the purpose of a DI BOX?

The research I did said that they can convert unbalanced signal to balanced signal through copying the signal, reversing the phase and putting those two phases back together to cancel each other out.

Is this accurate?

Yes DI's provide a balanced output, my understanding of how this works is that a transformer provides electrical isolation between the input and output. What you've described might be what the transformer actually does to provide the ground lift but I generally only get as technically involved in these things as I absolutely have to. (Hey, I'm a musician before i'm anything else :D ).

They also act as impedance matching devices. The output from (passive) guitar pickups is pretty weedy, the DI takes the signal and outputs it balanced and (usually) at mic level so it can be fed to the mic input of the mixing desk.

Maybe Mike Doughty will talk about direct injection on Letterman tonight! :D
