A mic for a every-day-life sound lover. for everything: bee's, central city noise etc

hello guys!
so, lately I am fascinated with recording all sort of sounds, and editing it on my PC... and I think I need a really good mic for that. So I can record things like: scraping fingers, lighting a match etc. in perfect quality, without any noise, with a great deepness of sound... so generally things that are naturally quite quiet, that's what I'd like to record, but not only - things that you can hear in central london too - and do you think I would need different kind of mic for that?

Not only that - Recording interviews, as well as live band music - for that I would probably need to buy 2 mic's for stereo.

Can all this be achievable with only 1 kind of mic?

I don't have a certain budged, I can spend as much as I need to, to get a proper mic for what I need...
The only thing is I wouldn't probably like it to be totally huge - because I would probably carry it everywhere.

Why do you want it to be stereo? Music recorded by professional artist - The vocals are monotone whereas the background music is stereo. Besides, if you're living in a noisy environment, then I suggest you get a dynamic microphone like the Shure SM58. I have one and it sounds pretty great, considering the fact that it is less sensitive and picks up less background noise as it is a cardioid microphone.
 
For convenience and mobility, maybe a portable stereo recorder would be the way forward.
Take a look at the zoom h4n and similar.
 
@darrenvocal: ah well but obviously i wouldn't need a mic for vocals (cuz bands always have it) so i meant 2 mics for instruments.

what i know now is that it will not be easy for me to pick one... cuz i want a really good one and something that gives you a lot of freedom in setups and sound control/optimization... in fact to pick a microphone is like to pick an instrument...

I don't think there's a single mic for you but how about this:

Get the previously suggested Zoom H4n as your portable recorder and use the fixed stereo pair for general atmos, recording bands from the audience, that sort of thing. However, also buy a Rode NTG-1 shotgun (and a short fishpole and something like a Rycote Softie wind gag) which you can plug into the H4n for your sound effects, interviews, etc. The NTG-1 is a nice shotgun and very similar to expensive mics like a Sennheiser 416--between them, they're the sort of mic commonly used for film and TV location recording including interviews and effects. (If you think you'll ever need to use the mic without a source of phantom, go for the NTG-2--same mic but with a battery compartment to self power.)
