In that price range you're looking at a 4-track cassette deck, like a Tascam. You can get pretty decent quality out of them if 4 tracks is enough for you. If you need more than that the price goes up real fast.

Don't give up so easily.
First off, that high flexibility wire CAN be soldered. It's a lot easier to do if you use a gob of flux before touching your solder to the connection. Don't rely on the stuff that comes in the core of the solder itself.
Second, if you have good joints ( solder joints )...
How about covering them when they aren't in use ? You could put a box or a milk crate over them so the cats couldn't get at them.
