stereo/mono(?) recording from mixer...

I'm running the main outs from my mixer to the left and right in of my Audiophile. When I go to record a track I always have the option of recording a stereo or mono track in the software. If I want to record, say a guitar track, do I want it to be stereo or mono; would that mean I would just use the left or right input of the soundcard, and since the mixer is already connected in the back, pan the output from the mixer to a side?... What would I want to record in stereo as opposed to mono?...

Thanks guys....I already searched on this, but couldn't find specific answers to my questions....
 
If its a mono guitar signal you are recording, record it mono.....I go thru a Johnson J-Station into my Audiophile, so I record stereo because the effects are stereo.....whats your chain from guitar to Audiophile?.....
 
I run everything in to the mixer and then the stereo outputs from there. However, I run a mono signal out of my J-Station in to one of the mixer channels.
