Refinishing guitar body

I have a warmoth swamp ash body guitar that I've been using for 7 years. When I built it I didn't spend much time on the finish -- I sprayed on a few coats of clear satin polyurethane. It looks fine and I like the feel. However, over the years the coating hasn't given the guitar the greatest protection. There are lots of fine scratches and small dents in some places.
I don't mind them but going forward I want to protect it better. What products/process should I use? I like the satin finish and don't want a high gloss look. I also want to use as few coats as possible. I want to protect the guitar but not alter the look or sound. The swamp ash is a pretty open grain, do I need to fill it? Wouldn't that change the sound?
