I've had another look at piano recording, now I've had a bit of time to experiment. Stereo, mono and even a bit of M/S.

After listening to the various stereo samples (on headphones only), the mono sections just sound completely unnatural. On speakers, in a room, they sound better, but still a bit static. I was surprised that the cheap gooseneck mics sounded decent. Mixing those into group recording would be completely acceptable. Of the various methods, I think I prefer the U87/Ribbon combination. That's not the first time that I've found an M/S setup as sounding good. It seems to avoid the "hole in the middle" that some stereo recordings exhibit.
 
Frankly, it was a bit of a surprise. both of those single mics sounded lacking didn’t they? Perhaps I should take the Neumann and see what happens if I add a little artificial reverb.

I have always where I could, bought two of a new mic so stereo or blended recordings can be made, but that was impossible with the 87. For people with a limited budget, two could be a problem and normally you’d need identical mics, but with M/S you don’t. That ribbon was around £100 ten years back. They’re really hard to find now. They‘re Chinese in origin and occasionally appear on ebay under the Citronic brand. Quite why an old disco equipment firm ever did a ribbon, I don’t know, but it is nice.
