As always when using omni's your room is going to play a larger role to the sound then if you were using cardioid's, so if your room isn't so great, the results could be poor. Other then that, go try it! I've been wanting to try that same thing with some naiants.

You won't get such a strong image compared to using cardioids, but I'm sure it'd sound nice provided the room's OK.

Well, since I do it, it probably doesn't make sense.
However, it can sound good. I happen to have enough Studio Traps that I can wrap the drum kit and get a really good tight sound and dial in how much room sound I want.
Sometimes I like the sound of just those two mikes, when I want a kinda mushy kick drum sound. Depends on the sound I'm after.

i've done the recorderman with omni's before, it sounds alright, but def. not as much stereo spread as cardiod would give you.

You could also baffle/gobo the omnis... that will take the room out of the picture more.

Yeah more isolation would help.
I would suggest just buying a cheap stereo pair of ldcs. The Joe Meek JM27s are only 100 for both and I like them.
