Hey I don't know, maybe tracking another bass track at the end allows the player to adjust their playing to the surrounding dynamics.
I've always worked to get the bass/drum tracks recorded first and build from there, but it's fun to experiement, I seem to be hearing the subtle grinding of the jazz bass pickups more when I put it down last, I don't know why it would float to the top, or maybe it's just a false impression - sounds like it moves into more sonic space.
