(3) alesis adat xt20's with a brc. these are mounted in skb cases with a power supply. this is much more reliable than dragging my pc out on the field. i then, bring the tracks back and transfer them to vegas via motu 2408 mkIII. works great!!

For mobile recording I use two type II ADATs and a Mackie 1604VLZ all racked together. I transfer to computer thru a MOTU 2408 mkII. The ADATs are WAY more stable than a computer in this application in my experience.
 
I have a minidisc recorder with an sm58. it works pretty well for what i paid.
 
I have a similar 2U tray which I have a PC mounted on, in a 4U SKB roadcase. Underneath the computer is a MOTU 2408 MKII
and a headphone amp. Along with a Yamaha 01v and a 15" LCD monitor, which makes for a very portable rig. Cubase SX is what I use for tracking. The PC is dual boot for Win98SE & XP, I take along Ghost images of both OS's as well. For smaller shows I use the 01v for FOH. For bigger shows I use a stage splitter off the house system. I can record up to 18 tracks simultaneously.
Two years ago I would not of entertained the idea of getting out and about with a PC. I was using a Fostex machine. But the current system has not let me down. Toyed with the idea of going laptop for even more portability, but it wouldn't have as much grunt for my dollar.
I provide the service of recording live shows and rehearsals. Some jobs are weekend blockouts, where I can record a band in their natural habitat. In this situation the PC rig is handy, as the project can start being edited while on site.
 
I use a Mackie MDR 24/96 in a softshell rack case with a shoulder strap that makes it very easy to carry around. My usual gig is at my church where I have a patchbay connected to the direct outs of our FOH Midas Legend board to pick and choose whichever channels I want. For other gigs I have a 16 channel Tascam M-1516 mixer that I can carry, but it only has 8 direct outs, so it limits how much I can do simultaneously.

Back home, I mix analog, but also have a Firewire dock that I can use to download individual tracks for PC processing or (eventually when I get some software) can use to dump the entire recording for PC mixing or whatever I want. This recorder is ultra-reliable and never freezes up (and there are no tapes to be eaten).

And when i need more channels I add ST-audio ADAM24s to taste.

I haven't racked it up yet but carry it around in a suitcase, 'cause I have yet to decide what mic pres to use. (Soundcraft F1 for the time being.)
 
My mobile configuration is a VS1880... Rather simple. Pick it up, put it in the car with some stands, mics and cables, done.

If I wanted to do bigger stuff, I'd pick up the phone, and get some friends in on this. One with a mackie HDR24/96, and another one that owns a PA company... :D I'd have to share my income, but I'm sure I'd get a good price...
