I have heard when recording digital stuff, you must not let it peek above -6

is this true?. and does that count for when mixing, nothing must go above -6?

It's a safety margin for cheap gear that may not register digital overs properly. -6 dBFS is way conservative (kinda like a Margaret Thatcher approach to recording digital). You should be able to go to -1dBFS without any problems though it's not necessarily needed.
 
Actually it is impossible for audio to peek because it lacks eyes. However, you don't want it to go over 0 db because it will clip and essentially chop of the PEAK of the waveform.
