I've never done quite what you're doing. I mostly work with synthesizers so I don't strictly need a preamp for each channel.
Your setup lists bass, drums, piano and guitar. I don't know if you're going to be mic'ing all of those (the bass and lead guitar could be direct-injected, piano and drums too if they're electronic rather than real), but anything that does require a microphone will require a preamp (especially if it's a condenser mic requiring a 48v power supply).
A patchbay will not do the trick - it's used for signal routing. It is literally a unit containing pairs of sockets which you can join together to make plugging things in and unplugging them easier. A preamp is an amplifier, generally one used to drive a microphone.
The way I personally would do it would be to get a mixer or something with 8 bus outputs and use that, since they normally have preamps built-in and would allow you to apply EQ on the input signal. This is how I work except that I don't need 8 outputs because I build songs up layer by layer. Someone else would have to recommend suitable hardware.
The other option is to get a dedicated 8-channel preamp unit. The Studio Projects SP828 looks like it should do the job, but it's not exactly cheap and have no idea how well it works. I was hoping someone else who records live could make a recommendation.
Oh - a completely crazy idea would be to get 8 Behringer MIC-100s or something. I can't say I'd recommend it, but it would come out cheaper than many of the 8-way preamps.

I PM'ed you. It can be done with your current gear. A little tricky but it can be done.
jpmorris is spot-on with his explaination of the patchbay. It is a totally passive piece of gear that just makes patching more convenient. Alesis has complicated the terminology by labeling the I/O section on the Multimix8 as a "patchbay". Its not what would normally be called a patchbay per se.
