Hi,
which of the follwing pairs would you use for rock drums over-head? which one for jazz kit? why? what character should I accept from each pair?

I would go with the km184s because they sound like the ultra-expensive mics they are, and are well-suited for drum overheads.

Kind of sound you can expect: depends on what the drummer and the kit sound like. With drums more than with anything else, mic selection has very little to do with what kind of sound you'll get. That's up to the drummer and the kit.
 
I'm really a fan of a single large condensor as an overhead on a kit.

Which mic is more dependent on the room, the drummer and the kit than on the style of music? I've heard it done very well with a Studio Projects C1 and fancier mics such as a Neumann U67.

What do you do for stereso separation when you do the single overhead deal?

I like to do the same from time to time, when I get bored with the old standby, dual mco12's. Just for fun, I will stick the mc012's out front, spread them out and aim them just above the toms and below the cymbals. Then the Marshall mxl 2003 overhead. I do this sometimes when I want a more powerful rock sound. It sounds cool on the tom rolls, as the toms sound really in-your-face and give you some really exaggerated stereo separation as they go from tom to tom.
