Newbie with mac questions

I am getting a Powermac, but am unsure of what I need. Will the dual core 2GHz do the job? What will I gain from the 2.3GHz, or even the quad 2.5GHz models in terms of performance.
I am planning on running cubase or acid, not recording multiple tracks @ once (maybe 1 or 2). Using a drum machine, keyboard, and hooking up my multi-track recorder sometimes.
 
The dual core 2Ghz should be fine if you're not overloading on tracks. I believe the larger ones will just be faster.
 
Get the most powerful one you can afford at the moment. It will last you a good couple of years and you won't have to replace it in a year becuase it will be able to handle everything.

BTW is LOGIC a "good" program for recording/making music/tracks etc?

I use Pro Tools but Logic is supposed to be a very good program. Very good for midi and audio from what I've read. A little on the expensive side unless you get express but the plugins and instruments are supposed to be good quality. Your mac should come Garageband which is a easy program for beginners and contains some pretty good instruments and loops. Garageband might be all you need unless you're wanting to do more editing or need more features.
