I have a 4 TB USB drive on my computer, and after I do anything significant, I copy the updated directories to the USB drive for backup. It might take 2 or 3 minutes at most. I also put copies of any program install files on that drive.
 
Regarding graphics, I would recommend a fanless graphics card of some kind. Some modern DAWs use advanced graphics APIs where having even a basic graphics card can help relieve some burden from your CPU. Graphics cards are also recommended if you use multiple monitors and/or super-high resolutions.

I wouldn't sweat the specs on your build too much. These days even a lot of off-the-shelf laptops are powerful enough for serious DAW work. Invest in at least 32GB of the fastest RAM your CPU supports and as much SSD storage as you can manage.
