Does anyone know of any software that I can download that changes mp3 files to MIDI files (if that is possible).

It's achiveable theoretically, but practically there are only few programs made that can recognize audio and transfer single tracks to midi (yeah, don't even try it with any complete songs with many instruments). It's far from even normal, and it's not suitable for something decent. It's a sound recognition technology, which some enthusiasts just experiment with, and can't get any good results. You can find it in any search engine like google.com, but i don't really suggest to go into this.

I really just wanted to use it to get my own songs into (eventually) sheet music. I was gonna make a mp3 to a MIDI then import it into Guitar Pro 4.0... do you know any programs that will transcribe one if not all the instruments in a song to Sheet Music

Neon Glow is right, there's nothing that can really do that. There are some things that can take a monophonic recording (just one melody line) and do a pretty good job with that if there aren't too many embellishments (bends, trills, etc.), but that's about all.

Yes there is a great tool to use:

It's a very old computer called 'your brain'. Learn to transcribe sheet music.

Computer systems are getting there, but they're not up to the HAL9000 abilities yet (and once they are, you can kiss a lot of music and writing jobs goooooddd-bye!)
